Nature's Candy Parfaits
Servings: A bunch!
1 cup walnuts or pecans
1 cup pitted dates
1 tsp cinnamon (or more to taste)
1 tbsp agave nectar plus more for parfait
1 tub of Total Greek Yogurt
Strawberries, blueberries, raspberries or your favorite berry
1. In a food processor, combine all ingredients except yogurt and berries.
2. Serve the mixture over yogurt with a drizzle of agave nectar and berries.
Apple Pie Quinoa
Servings: 4
1 cup of quinoa, rinsed
2 cups of apple juice or cider
2 apples
½ cup of raisins
½ cup of walnuts, chopped
1 tbsp cinnamon
1 tsp ginger
1. In a small pot, combine the quinoa and apple juice. Bring to a boil and reduce heat. Simmer for 10-15 minutes or until the water has evaporated.
2. Place the cooked quinoa in a large bowl and grate one apple into the bowl. Finely chop the other apple and add it to the bowl.
3. Stir in the raisins, walnuts, cinnamon and ginger. Adjust spices until desired flavor.
